On occasion a three burner cooktop may be appropriate particularly when desirous to alternating between gas and electric fuel, or when attempting different cooking styles.
While gas cooktops facilitate a more intense heat and better heat control, with instant switch from high to low, electric cooktops necessarily take time to heat up or otherwise cool down due to radiated heat, which is not lost easily, nor turned up instantly. Thus with Chinese cooking requiring direct heat application with intensely hot flames, electric cooktops may prove inadequate for the purpose.
However, electric cooking comes in handy for almost all other cooking requirements, and proves cost effective in terms of operating costs, particularly when tapping the potential for radiated heat. This requires a finer sense of timing, knowing when to turn off the electric coils or elements, with the remaining cooking achieved through the heat radiated from the coils which take a while to cool down completely.
