If steam burns are more severe than burns resulting from boiling water, this is indicative of the heat potential of steam or hot air, which is put to constructive use in kitchen wall ovens.

While conduction or radiation cannot achieve the same effect rising hot air/ steam has on dough, convection heating is what allows one to turn out breads, cakes etc., which need hot convection air to pass through the dough fibers which ultimately causes breads and cakes to rise.

Generally classified as dry heat cooking, kitchen wall ovens are primarily used for baking and roasting, though not infrequently used for broiling, simmering or poaching. In the latter, the presence of moisture or water content is what allows boiling or simmering, each of which is achieved at different temperatures, i.e approx. 212 degree Fahrenheit and 170 degree Fahrenheit respectively.

In considering kitchen wall ovens, these appliances need to be differentiated / classified as conventional, and convection kitchen wall ovens. These models are deficient with respect to fans and other exhaust systems. The convection kitchen wall ovens achieve a better and even distribution of heat through a more efficient use of the hot convection air, which is controlled, towards achieving maximum results, through the use of fans, exhausts and vents.

Most often, the pre-heating requirement of conventional ovens can be dispensed with, when using convection style. Apart from this, the efficiency of a kitchen wall oven is affected by the general design and materials used in the making of these appliances, the general focus being on maximizing the heating potential through appropriate design and the right material, such that all potential for infra-red heating, or heat being reflected back by inner surfaces etc., is fully tapped, a factor that has lead to increased demand for stainless steel wall ovens which are ideal for reflecting heat, not to mention the ease of cleaning.
