Many of today’s varied menus would be impossible but for better control of heat and temperatures. Controls in cooktops can either be mechanical or electric. 
Thus, while mechanical controls are constituted by knob controls for cooktops that effect temperature change or otherwise heat intensity, when turned clockwise or anticlockwise, electric touch cooktop controls are constituted by electronic panels that are integrated with sensors, thermostats, and circuits that allow for temperatures to be pre-set.
With the circuits making or breaking the connection with the power source, depending on the data supplied by the sensors and processed by the built in microprocess or mini computer. On an average, knob controls are least susceptible to defects, with easy replacement of parts, with little or no affect on the operation of the cooktop.
However, electronic or electric touch cooktop controls, when defective, can hardly be repaired and will need to be replaced. Hence it is worthwhile checking on the replacement costs of these components, since in most cases, a damaged electric control panel will leave the entire system dysfunctional.
When looking at cooktops with mechanical knob controls, it may prove useful to ascertain whether or not it is dishwasher safe, since mechanical knob controls often get lined with grease and grime, with cooking activities commonly involving touch food and the knob with the same hands.
